TOSS IT IN SMOOTHIE

Sam got me a Vitamix for Christmas the year before last and it is something I use every day. It is definitely an investment and I have a lot of friends who've splurged on one as well. Any high powered blender will do the job, but I highly recommend treating yourself to one of these bad boys.

My body has been craving raw produce and smoothies are one of the best ways to sneak it in. I worry so much about Matilda getting all of the nutrients that her growing body needs and most of the time the girl does not want to eat. Lately, unless it's bread, she's not touching it. However... she will crush a smoothie. Woohoo! This smoothie in particular is a "everything but the kitchen sink" recipe, with the coconut milk making it nice and creamy. The color was the prettiest mint green. It was awesome.

"Toss it in" Smoothie
- 1/2 c coconut milk
- 1/2 a lemon
-1 carrot
- ginger
- 1/2 cup raw brocolli
- handful of kale
- 1 orange peeled
- 1 green apple
- 1 cup of frozen berries
- 1/2 a frozen banana
- ice


I am working so hard to keep up healthy habits. Matilda and I did sun salutations outside yesterday in the warm sun. Oh how I have missed the sun. We also snuck in a walk and coffee date with friends. I'm really trying to find a life/work balance. It has been a little crazy 'round here. I feel like I'm hitting the pillow harder than ever. Downtime mostly consists of tv (this and this in case you want to chat about that) and I'm craving God-rich solitude. Luckily, we are heading to the woods this weekend. Couldn't have come at a better time.

  1. I've been trying to keep up healthy habits too so I can totally understand. Every day may not be the healthiest but at least you're conscious of it for yourself and your family. Have the best time getting away to the woods - we've been in need of that too lately!

  2. I keep saying I need start eating/living healthier too (says the girl who baked a cake last night for no reason at all!), but it's so hard to give up all those good-tasting, bad-for-you snacks! I think, for me it's all about getting into a healthier routine...and there's no time like the present!

    That smoothie sounds too good. Maybe I will whip up one of those bad boys tonight! :)

  4. This is exactly what I need right now. I think I managed to stave off sickness (I started to get sick, but got better before it got REALLY bad) through healthy eating, lots of vitamin C/Ester C, and trying to get enough sleep. This reminds me that I need to get back on the green monster train (or some variation of it). I'm so interested in the broccoli--I wouldn't think it would taste good in a smoothie!

    We need to talk Friday Night Lights STAT. As you know, I became completely obsessed two summers ago (that's what got me into football!!!). I'm amazed you've managed to do anything else in life now that you've started. Where are you in the series? And are you head over heels for Tim Riggins yet??

  5. This smoothie sounds incredible. I never really liked the idea of a green smoothie, because I never thought to add fruit ;) Great inspiration, Lesley! :) Hope you have a blast in the woods this weekend!!!

  7. This is the second recommendation I've seen TODAY for a vitamix. Weird. I think I need to budget for one of these bad boys.
