FARMER'S CASSEROLE + GIVEAWAY

Farmer's Casserole
based on an eMeals recipe


You will need:

  • 3 cups frozen hashbrowns
  • 3/4 cup shredded cheese
  • 3 slices turkey bacon diced
  • 1/2 yellow onion diced
  • 4 eggs
  • 1 1/2 cup milk
  • salt + pepper

    Method:

  • 1. Preheat oven to 350.
  • 2. Grease the bottom of a 2 qt glass baking dish.
  • 3. Line the bottom of the dish with the hashbrowns. Cover with shredded cheese.
  • 4. Cook bacon and then remove from pan. Use same pan to cook onions until translucent. Chop up bacon and add bacon and onions to dish.
  • 5. In a bowl, whip the eggs + milk and add the salt and pepper. Pour mixture over the rest of the ingredients.
  • 6. Bake for 40-45 minutes, until fork comes out clean. Let sit for five minutes. Enjoy!

I've told all my friends how much I love it because it's so easy. You get a print out with the week's menu as well as a corresponding grocery list (just make sure to fill your husband in so he doesn't buy last week's groceries - this may have happened). The grocery list is set up by aisle, making it super easy to navigate the shop. You can even pick your plan based on where you shop. Bonus: The plans are budget-friendly and the week's menus are even based on the coupons for that store (if you choose a store plan). Awesome!

    Just cooking for one or two? They have plans for that as well. You can also tailor your plan to your diet: gluten-free? low-carb? organic? all covered. Sam and I have been doing the low-carb plan and I make it organic as well by making substitutes if I need to. Also, if there's a recipe that doesn't sound like our kind of meal (unfortunately I am not a fish eater), then I'll skip that one and plan for a meal out. Because really, who cooks seven days a week? Don't lie.

    6. I'd probably choose the natural & organic or low carb. I love all their new meal plan options! I joined about a year ago for 3 months, but there weren't as many options so it was hard to find a good plan for the way we like to eat. So many options now! Just wish they had a Trader Joe's option :) And it makes me miss Publix...

    9. Funny that you're on the low carb plan but they gave you a recipe whose main ingredient is hashbrowns. :) Looks delish, though! I liked emeals on fb (and you, duh) and I would choose the vegetarian plan, of course!

      1. haha! they actually only do one of these type recipes a week and this one only has 20 carbs, so not terrible because it's such a thin layer of hashbrowns on each piece. it's sooooo good.

    11. I've been looking into EMeals thanks to Dave Ramsey, but just needed an extra PUSH. With 3 little ones under 5, and a husband that works into the night, maybe I would be able to pick the meals for 1-2 people, and get to head back to Whole Foods with eMeals help!! Now wouldn't that be nice!

    12. i'd vote clean eating for sure. just liked them on facebook :) but do the "any store" plans apply to trader joes? because we don't usually shop at any of the other places....

    13. Joe and I just sucked this dish down as a very late(I don't work tomorrow) dinner. So good. I am thinking the clean living plan or Publix plan for us. Aaron loves his veggies.
