
Ok, so these are not your mama's mashed potatoes. Sam and I have been experimenting in the kitchen and last night he made these incredible mashed "potatoes" using cauliflower. Y'all they are so divine and creamy and totally healthy and low-carb (if you're watching them). Also, they are gluten-free! I'm being extra June Cleaver and making a pot roast tonight to go with the leftovers.
Mashed "Potatoes"
based on this recipe
You will need:
1 medium head cauliflower
1 tablespoon cream cheese, softened
1/4 cup grated Parmesan
1/2 teaspoon minced garlic
splash of chicken stock
freshly ground black pepper
3 tablespoons unsalted butter
Method:
1. Clean and cut the cauliflower into small pieces. Cook in boiling water for about 6 minutes (or until tender). Drain well. Do not let cool. Pat cooked cauliflower very dry.
2. In a blender, add the cauliflower + rest of the ingredients and blend until smooth. You can also use an immersion blender or food processor. Enjoy!

DeleteI love mashed cauliflower! It's so smooth and yummy. I'll have to have B try this recipe :) I think we've been making it w/out the cream cheese but cream cheese makes everything better.
ReplyDeleteTotally gonna make these. This is the second time I've seen them on a blog in the past two days, and I'm always looking for new things to do with vegetables. Cauliflower is not generally my favorite, but I just might like it if it were cheesy and creamy and somewhat resembled mashed potatoes. :) 1/8 teaspoon chicken stock?! That is SOOOO TINY!
