

Last week I mentioned that Matilda and I went to the library to check out books for the first time. We were having so much fun that I wanted to keep the good times rolling. Matilda
loves helping me in the kitchen and baking is one of the most fun things to do together. I always try to make these adventures as healthy as possible, but I'm pretty sure that making chocolate chip cookies with your little girl is not only a right of passage but it's also extremely good for the soul. These cookies are gluten-free (but definitely not free of taste) and I added lots of mini chocolate chips, shredded coconut, and pecans for a little crunch. They're amazing.
Gluten-free Coconut Chocolate Chip Cookies
adapted from Pamela's chocolate chip cookie recipe
You will need:
1 stick of butter
1 egg
1/4 cup raw sugar
1/4 cup light brown sugar
1 tsp vanilla
1 1/2 cups Pamela's Baking Mix
1 1/2 cups Mini semi-sweet chocolate chips (I love these)
1/2 cup of shredded, unsweetened coconut
1/4 cup chopped pecans
Method:
Preheat oven to 350
Cream together softened butter with the sugar.
Add egg + vanilla, mix
Add mix then chocolate chips + nuts + coconut, mix
I use a small ice cream scoop to make approx 20 cookies
Place cookies on a lightly greased baking sheet and bake for 12-15 minutes. Enjoy!
