Two Vegetable Smoothie Recipes


Like most people on the earth, one of my goals this year is to be healthier. Sam and I are eating mostly paleo and trying to substitute a few meals with super veggie packed smoothies. One of my very favorite features of our Vitamix is that we can get an almost juice like consistency by pulsing it until thin. I found this 3 day juice cleanse by Joe Cross (he did that documentary Fat, Sick, and Nearly Dead) and Sam did it for two days... I made it a day and a half. Does that count for something? I did however enjoy the recipes. Here are two that we liked: Gazpacho and then I made my own version of their Green Juice (in smoothie form). Recipes below!


Gazpacho Smoothie
You will need:

- juice of a lime
- 4 cherry tomatoes
- 1/4 red onion
- 1 red bell pepper (chopped)
- 1 cucumber (chopped)
- 2 celery stalks (chopped)
- bunch of parsley

place ingredients in a high-powered blender as listed and blend until smooth. enjoy!

Green Citrus Smoothie
You will need:

- 2 clementines
- juice of one lemon
- 1 red apple chopped
- 1" of ginger
- 6 leaves of lucinato kale

place ingredients in a high-powered blender as listed and blend until smooth. enjoy!

  1. Eeep, I wish I could get into veggie smoothies, but the thought makes my mouth pucker! I could eat bowls full of broccoli, but blend it into a juice and I can't run away fast enough!! I got a Ninja blender for Christmas so I'm looking forward to trying lots of smoothies and MAYBE I'll be able to handle a veggie one after a while. That 3-day juice cleanse looks intense- 1.5 days definitely counts for something in my book!!

    1. the juice cleanse is intense but you would love that green smoothie. the fruit makes it really yummy!

  2. I think I might have watched an episode of that Fat, Sick and Nearly Dead. Crazy! I've considered doing a 2/3 day juice/smoothie cleanse but I just don't think I could go through with the pure vegetable ones hah! I can manage a couple vegetables mixed with fruits (my favourite is beetroot, apple, carrots, lemon and ginger juice) but I don't think I could manage drinking a pure vegetable one haha! I'd love to see some of your paleo meals though as me and my boyfriend started eating paleo last year and I love seeing inspiration for meals.

  3. I love a handful of spinach in almost any smoothie, but I love the idea of a Gazpacho smoothie! Probably defeats the purpose if I add vodka huh?!
