Paleo Chocolate Pots De Creme


So, you may remember that I have a super soft spot for pots de creme. Like, super soft. Unfortunately the pots don't really love me. I'm always looking to make a healthier version of my guiltiest pleasures and THIS was a total accident. I've been on sugar restriction and really craving chocolate so this was completely serendipitous. Only three ingredients: raw cacao powder, coconut milk and one packet of sweet leaf stevia.

Paleo Chocolate Pots de Creme

You will need:

- one can full fat coconut milk (refrigerated over night)
- 4 T cacao or cocoa powder (look for all-natural and unsweetened)
- 1 packet sweet leaf stevia

In a mixer scrape out solidified coconut milk from can and whip on how. Slowly add the cocoa powder until it darkens, then add the stevia. Whip on high until thick and creamy.

I don't usually like to use sugar substitutes, but this stevia has no bad aftertaste and makes for the richest chocolate flavor with just a hint of sweetness. You could also use coconut sugar or raw honey. The texture is whipped, chocolate-y heaven. I seriously have to stop myself from making it every day. You can eat it right away or put it back in the fridge to get a more mousse-like consistency. Equally delicious.
