Peach, Pistachio and Avocado Salad

Three cheers for sundays. I feel so refreshed having had Sam home for a couple of days. We had a really nice sunday with a bike ride on my

pretty new bike

), a morning filled with the Gospel (I seriously cried just being in our church - it had been too long) and we got to see my mom and a sweet friend Maggie who came up to stay with the girls so we could have dinner over at our

friends' lovely home

(which is in walking distance -ee!). We were in charge of the salad and I really needed to use up some of our costco produce thus this pretty bowl was born. It's also an awesome way to use up those peaches that everyone is scooping up at the farmer's market.

Peach, Pistachio and Avocado Salad

serves 4

You will need:

- spinach or mixed greens

- 2 peaches

- 1 ripe avocado

-

homemade dressing

 (my go-to, used recently in

garden in a jar recipe

)

- goat cheese

- good salt and pepper

- salted pistachios (get the kids to help you shell them)

I made the salad an hour before we got to our dinner party. Layer all toppings on top of the spinach and then drizzle with dressing. Finish with a sprinkle of ground pepper. Leave extra dressing for serving.
