My Favorite Summer Salad

You guys. This is my favorite garden salad. It's perfect for using up all of the tomatoes and cucumbers you're growing (not to mention basil!). My hero of a neighbor shared her garden bounty with us this week (see

asked me for this recipe yesterday and I realized I had never shared it.

We probably planted our tomatoes too late but here they are in our new

surrounded by herbs. Sam covered the weeds with mulch and it looks so much better. A garden update soon...

Matilda wants to help with all things so I put her to work washing the veggies (and then she started biting into all of them - haha!). Not complaining, LOVE that she got some vegetables in her.

This kid. She's pretty great company in the kitchen. Learning to let her try to do lots of new things. She is completely capable and loves to cook. This dressing is SO good. You can't go wrong with this combo in my opinion.

Cucumber + Tomato Salad

You will need:

- a whole tomato or several cherry tomatoes (or use a combo like I did), chopped

- two cucumbers, chopped

- 1/4 sweet onion, diced

for the dressing:

- 3 T good olive oil

- juice from 1/2 a lemon

- one shallot finely diced

- 2 T white balsamic vinegar

- s + p to taste

I make the dressing in a separate bowl and then drizzle over vegetables. Toss to combine. I drizzled a little more olive oil and a pinch of salt and pepper. Let the flavors marry for at least an hour in the fridge before serving. Enjoy!
