Our Favorite Paleo Breakfast: Sweet Potato Hash

Do you have that weekend recipe go-to? Ours is HASH! Sam makes this every weekend for us, typically on Sundays. I love familiar comfort foods and this one hits all the right notes: hearty, savory, sweet, salty... so good.

Sweet Potato Hash

serves four

You will need:

+ 2 large sweet potatoes, diced (enough for a single layer on a cookie sheet)

+ 3 eggs

+ 1 lb of natural sausage, we prefer beef from our local butcher

+ 2 medium yellow onion, diced

Preheat oven to 375. Roast sweet potatoes in the oven with a little bit of oil + salt for roughly 40 minutes or golden brown. In the meantime begin to sauté the onions with 2 T butter until translucent and then add in sausage and cook until done, then drain if necessary. Combine sweet potatoes with onions and sausage and then add in eggs until cooked and combined. We also love adding some fresh rosemary to this. Enjoy!
