Advent Week 1: Host a Pancake Breakfast with Friends


In case you missed the intro yesterday, this week is all about Advent! Joni from Lay Baby Lay and I will be sharing fun ideas + inspiration for you and your family. For the first sunday of advent (December 1) why not host a pancake breakfast with friends? Attire: pajamas optional! The girls loved showing off their Christmas pjs. Here's an idea for the menu...

Our family loves pancakes, but we thought we'd make them extra fancy to celebrate the coming of Christmas. For years now we've been using Pamela's Baking Mix. It's gluten-free, light and crispy, and has this really lovely nutty taste. I should be their spokesperson because I love the whole line!


Menu for a Pancake Breakfast with Friends
Coffee
Polka Dot Pancakes
Maple Smoked Bacon
Hot cocoa

Polka Dot Pancakes

You will need:

2 cups Pamela's Baking Mix (or your favorite pancake recipe)
2 eggs
2 T Butter or ghee for cooking
1 cup Dried fruit (we used cranberries since they're so festive this time of year)
1/2 cup White chocolate chips (you could also use dark chocolate)

Mix all ingredients well. I like using a 1/4 cup measuring cup for the pancakes. They end up being the perfect size. Kids will love helping add the extras, like the chocolate chips and fruit. The idea is that the red and white look really Christmasy and as they melt, they look like polka dots but are sophisticated enough to serve to your friends. Win. Make sure you start cooking the pancakes before guests arrive since they do take some time to flip, etc.

Another great time saver is to bake the bacon on 350 until crisp. It's our new favorite and much less messy.

Today is Phoebe's birthday so don't mind me sniffling at home in a corner. Can't believe she's one. Birthdays are always so bittersweet. Love that baby girl.
